We're back on our subversive kick, mashing the decadence of Napa Valley white wine with a vintage, VHS-glowing aesthetic. Ecstasy is a wine that celebrates fantasy, glamor, and desire. Get ready to lose yourself in it.
Inspired by the white wines of Bordeaux, we initially sought out to make a blend of Sauvignon Blanc and Sémillon. After selecting a truly dreamy vineyard in Napa Valley, we discovered it was home to some equally magical Albariño. And you know us, we can never turn down additional complexity and flavor.
Appropriately named, the Field of Dreams Vineyard is a diamond-shaped gem situated inside the acclaimed Oak Knoll District. Planted within alluvial soils, this special spot enjoys gentle breezes from the San Pablo Bay alongside Napa Valley's legendary fog, leading to a long, balanced growing season. These conditions are maximally ideal for these varieties, creating grapes with flavor, acidity, and complexity.
Picked on August 23, 2024, we then whole-cluster pressed the grapes, allowed the juice to settle overnight, and parsed out each lot. For the fermentation, we utilized about 10% new French oak (puncheons), 40% used French oak, and 50% stainless steel. To create richer texture, we let the wine ferment on lees with delicate bâtonnage during fermentation. Once finished and aged, it was off to blending.
The resulting wine is lavish and layered. Aromas of citrus blossom and ripe stone fruit pour from the glass with subtle traces of brioche. Across your tongue, taste crisp, bright flavors of Meyer lemon and underripe peach, with a round mid-palate of creamy textures, lemon curd, and cantaloupe. On the finish, there is slight salinity and long, savory, leesy tension. It's fucking euphoric.
Plus it's versatile. It's crushable by itself. Pair it with some Manchego or Comté cheese, throw on Risky Business or Body Double, and it's heavenly. Cook up some Spanish tapas, crab cakes, or Moroccan chicken, and it's full-on orgasmic.
For labels, we love to subvert expectations. So we paired this indulgent Napa Valley white wine with a "Los Angeles softcore" aesthetic plucked from the early 1980s. Think neon lights, pastel convertibles, and poolside dreams. A sun-soaked dream built on illusions and Hollywood gloss. That's the vibe. That's Ecstasy.
