Élodie's Smash Burger Recipe

Savor our classic smash burger, featuring a hand-smashed patty with a caramelized crust, topped with sweet grilled onions, crunchy pickles, and our signature tangy secret sauce. This burger's rich flavors and savory notes are expertly balanced by the bright cherry and red fruit characteristics of Élodie.

Ingredients

For the sauce:
-½ cup mayonnaise
-1 tablespoon Dijon mustard
-1 tablespoon ketchup
-1 teaspoon kosher dill pickle brine
-Salt and freshly ground black pepper, to taste

For the burgers:
-1 lb ground beef (80/20 recommended for flavor and juiciness)
-Kosher salt and black pepper
-2–3 soft burger buns (potato buns or brioche work great)
-1 cup yellow or sweet onions, thinly sliced
-Kosher dill pickle slices
-Neutral oil (e.g. canola or avocado) for cooking
Butter (optional, for toasting buns)

Directions

1. Make the Sauce

In a small bowl, mix together the mayo, Dijon, ketchup, and pickle brine. Season to taste with salt and black pepper. Chill until ready to use.

2. Toast the Buns

Lightly butter the buns (optional), then toast them cut-side down in the skillet until golden and crisp. Set aside.

3. Form & Smash the Patties

    •    Divide the beef into 2–3 oz balls
    •    Heat the skillet over high heat until it’s very hot.
    •    Place beef balls in the skillet and top with onion, smash immediately with a heavy spatula or burger press — smash thin for crispy edges.
    •    Season with salt and pepper.
    •    Cook 1–2 minutes until the edges are crisp, and the bottom is deeply browned. Flip, cook another minute (add cheese now if you want).
    •    For double burgers, stack two patties per sandwich.

4. Assemble

Spread a generous layer of the sauce on both top and bottom buns. Add patties, charred onions, and pickles. Close it up and serve hot.
