Imagine cruising down a sun-drenched highway in a classic Cadillac Fleetwood, wind in your hair and worries left behind. That's the feeling we bottled up with Lay Low Paso. It's our nod to success, rebellion, freedom, and ongoing pursuit of the American Dream (with an added sense of confidence and style of course).

Let’s pop the hood on this Cadillac and talk winemaking. Lay Low Paso is a harmonious blend crafted with meticulous attention to detail. We start with 61% Syrah grapes sourced from Pear Valley Vineyard on the east side of Paso Robles. The silty clay and clay loam soils, with decomposed calcareous material, allow the Syrah to retain its natural acidity and ripen to perfection, resulting in velvety textures and supple tannins. To add backbone and juiciness, we incorporate 34% Petite Sirah sourced from the Templeton Gap District. Finally, a touch of floral notes and refreshing acidity comes from 4% Negrette and 1% Sangiovese, sourced from certified organic vineyards – Calleri Vineyard (Negrette) and Wheeler Vineyard (Sangiovese) in San Benito County.
