2021 It Was All a Dream, Red Wine, California

In your mouth, this wine will leave you hypnotized with all that Aussie-style opulence with California complexity. Blackberries, violets, and green peppercorns waft out of the glass. Once it hits your tongue, you'll revel in dark flavors of blueberry, blackberry cobbler, and black cherry, wrapped around notes of black pepper, licorice, and chocolate truffle. It's plush and savory across your pallet, with smoothly integrated tannins and a long, concentrated finish.

2021 Dynamic Karate Theory, Mixed Blacks, Clements Hills

With bold and velvety tannins, this inky gem is chock full of dark fruit like fresh blackberries, tangy boysenberries, and dried black cherries. A hint of cinnamon, nutmeg, and sage spars valiantly with the juicy plum bursting out of the glass. This wine is perfect as we head into fall as it wraps around your tastebuds like a cozy sweater on a rainy day. We paired Dynamic Karate Theory with a flat iron steak, crispy fingerling potatoes, grilled tomatoes, and garlic aioli from The Spinster Sisters in Santa Rosa. Let’s just say…the steak and wine were definitely making out. 

2021 Don't Forget Me, Red Wine, Sonoma County

Don’t Forget Me represents our love for Sonoma County and the Bordeaux varieties grown there. Grown in the Fountain Grove AVA in the Mayacamas range of Sonoma County, Don’t Forget Me consists of 96% Cabernet Sauvignon, 2% Petit Verdot, 1% Malbec, and 1% Cabernet Franc. Harvested in late September, the fruit was fermented in both oak barrels and stainless steel and then transferred to French oak where it would mature for 12 months. Bottled on the 17th of December, 2022, this can be enjoyed in its youth and will age gracefully through 2032. You’ll be captivated by the alluring aromas of cedar, roasted espresso beans, rosewater, and blackberry that lead the way to waves of macerated strawberries on the tongue. Beautifully textured with grippy tannins and a luscious chocolate-covered cherry finish, this wine will not soon fade from memory.

Softcore, Carbonic Red Wine, California

With a medium body in the glass, the first thing you'll notice when you smell this wine is the spice. White pepper and celery salt intermingle with ripe cherry aromas. Once deep (but not too deep) inside your mouth, flavors of wild cherries and blackberries wash over your tongue with a satiny texture and reveal notes of oak, earth, and...like...Chicago-style hot dogs...c'mon, that's sexy. The finish lingers, leaving you with a desire for more with every sip. Softcore is satisfying on its own, but extremely versatile when it comes to food. It pairs well with everything from risotto, to rare chateaubriand, chocolate truffles...and Chicago-style hot dogs. Honestly, we've loved slightly chilling the wine.
